I tried to make something with all the things I had in the kitchen and here’s the result.
It’s really easy to make, healthy and nice to show off with them at work.
You can make 8 to 12 pieces out of this.
– 1 cup grated carrots
– 1/2 cup grated coconut
– 1/2 cup oats
– 1 cup soaked dates
– 1/2 cup walnuts
– 2 tbsp lemon juice
– 3 tbsp pumpkin spices (you can use cinnamon if you don’t have this)
– 50 gram melted coconut oil
Put grated carrots, grated coconut oats, walnuts, lemon juice and spices in a bowl and mix it.
Melt the coconut oil and put it in the bowl.
Put the dates in a food processor and make a smooth date paste. Put this in the bowl too.
Mix it al together, put in a baking dish (or anything rectangular) and leave it in the fridge for half an hour. Et voila! You have superhealthy goodlooking carrot bites!
